The cuisine of coastal Maharashtra, Goa and Northern Karnataka….loads of coconut in various forms from dry, grated, powdered to milk…along with freshly ground masalas in different proportions of coriander seeds, peppercorns, cumin, cardamom, ginger, garlic, kokum, dried kokam (amsul), tamarind, mango (kairi) and most importantly the dried red chilli (bedgi).
